For the Sandwich:
- 2 bagels plain, sesame, or everything bagels
- 1 ripe avocado mashed
- 2 large eggs fried, scrambled, or poached
- 4 slices of turkey bacon or regular bacon optional
- 4 slices of tomato
- 2 slices of cheese cheddar, Swiss, or your choice
- 1 handful of fresh spinach or arugula
- Salt and black pepper to taste
Optional Add-ons:
- 1 teaspoon red pepper flakes for spice
- 1 tablespoon cream cheese spread on the bagel
- 1 teaspoon everything bagel seasoning for garnish
Toast the Bagel: Slice your bagel in half and toast it until golden brown.
Mash the Avocado: Scoop the avocado into a bowl and mash with salt, pepper, and a squeeze of lemon or lime juice for added flavor.
Cook the Egg: In a small non-stick pan, cook the egg to your preference. A sunny-side-up egg works wonderfully here but scrambled or over-easy is also delicious.
Assemble the Sandwich: Spread the mashed avocado on one side of the toasted bagel, add the egg, and top with any extras like spinach, cheese, or tomato slices.
