Ingredients

  • 2 bagels plain, sesame, or everything bagels
  • 1 ripe avocado mashed
  • 2 large eggs fried, scrambled, or poached
  • 4 slices of turkey bacon or regular bacon optional
  • 4 slices of tomato
  • 2 slices of cheese cheddar, Swiss, or your choice
  • 1 handful of fresh spinach or arugula
  • Salt and black pepper to taste

Optional Add-ons:

  • 1 teaspoon red pepper flakes for spice
  • 1 tablespoon cream cheese spread on the bagel
  • 1 teaspoon everything bagel seasoning for garnish

Instructions
 

  • Toast the Bagel: Slice your bagel in half and toast it until golden brown.
  • Mash the Avocado: Scoop the avocado into a bowl and mash with salt, pepper, and a squeeze of lemon or lime juice for added flavor.
  • Cook the Egg: In a small non-stick pan, cook the egg to your preference. A sunny-side-up egg works wonderfully here but scrambled or over-easy is also delicious.
  • Assemble the Sandwich: Spread the mashed avocado on one side of the toasted bagel, add the egg, and top with any extras like spinach, cheese, or tomato slices.
