Ingredients
  

  • 2 pounds Yukon Gold or Russet potatoes peeled
  • 3 tablespoons unsalted butter melted
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme or fresh
  • 3 cloves garlic minced
  • 1 cup chicken broth or vegetable broth
  • 1 teaspoon lemon juice optional, for brightness

Instructions
 

Prepare the Potatoes:

  • Preheat oven to 450°F (230°C).
  • Cut potatoes into 1-inch thick slices.

Sear for a Crispy Exterior:

  • In an oven-safe skillet, heat olive oil and melted butter over medium-high heat.
  • Add potato slices in a single layer and sear for 5 minutes per side until golden brown.

Bake to Perfection:

  • Add garlic, thyme, salt, and pepper, stirring gently.
  • Pour in chicken broth and transfer skillet to the oven.
  • Roast for 30 minutes, flipping potatoes halfway through.

Finish & Serve:

  • Remove from oven and drizzle with lemon juice for extra flavor.
  • Serve warm, garnished with fresh herbs if desired.
