Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup buttermilk or regular milk with 1 teaspoon vinegar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • ¼ cup chocolate chips blueberries, or diced strawberries (optional)
  • Maple syrup or powdered sugar for serving

Instructions
 

  • Start by preparing your preferred pancake batter in a large mixing bowl. Aim for a pourable, slightly thick consistency for the best results.
  • Heat a pancake popper or mini muffin pan over medium heat. Make sure to grease the wells well to prevent sticking.
  • Use a small spoon or cookie scoop to portion the batter into the pan. Fill each well about three-quarters full.
  • Cook the pancake poppers for 2-3 minutes, until the bottoms are golden and the tops are set.
  • Flip the poppers gently and cook for another 1-2 minutes, until both sides are lightly browned.
  • Take the pancake poppers out of the pan and place them on a wire rack or paper-towel-lined plate to cool slightly.
