- 2 tablespoons olive oil
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ¼ teaspoon red pepper flakes optional
- 1 can 28 ounces crushed tomatoes or marinara sauce
- 1 teaspoon balsamic vinegar
- 2 cans 15 ounces each white beans (cannellini or great northern), drained and rinsed
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 10 –12 pepperoni slices or plant-based alternative
- ¼ cup sliced black olives optional
- Fresh basil for garnish
First, gather all your ingredients and kitchen tools. This makes cooking smooth and organized.
Warm a large skillet or cast-iron pan over medium heat and add a thin layer of olive oil, spreading it evenly across the bottom.
Once the oil is shimmering, stir in the diced onions and minced garlic. Sauté for 2-3 minutes, allowing the onions to turn translucent and the garlic to release its fragrant aroma.
Then, add the drained and rinsed canned beans to the pan. Gently mash about half of the beans with a potato masher or the back of a spoon, leaving the rest whole for a nice texture.
Stir in the tomato sauce, Italian seasoning, and a pinch of salt and pepper. Let it simmer gently, stirring now and then, for 5-7 minutes to blend the flavors.
If the bean pizza mixture seems too thick, add a bit of water or broth. Adjust the seasoning to your liking.
Finish by scattering the shredded mozzarella cheese evenly over the surface. Allow it to melt for 2-3 minutes until it's perfectly gooey and bubbling.
